Gluten Free Sundried Tomato and Bacon Chicken with Feta and Basil
Butterfly chicken breast. The easiest way to ensure juicy chicken and one of the first ways I learned how to make chicken breast. In the Art Deco kitchen of one of the Quad residence halls on the UNCG campus my sophomore year at uni, my roommate stands over a plate with a fruit knife, nearly halving chicken breasts. Although her technique was amateurish, the chicken was incredible and it surely one of the best things ever to come out of a college dorm.
Made with Creative Nature's cacao powder, these chocolate macarons are filled with luscious salted caramel for an indulgent, gluten free treat!

Gluten Free Salted Caramel & Cacao Macarons
Cacao is the raw ingredient chocolate is made from and is one of the most chemically complex foods known to man. For this recipe, I used Creative Nature's cacao powder, an organic powder ground from the popular Criollo beans. The thing I love most about cacao powder is that you still get a lovely chocolatey taste without the usual concerns associated with chocolate.

Gluten Free Afternoon Tea with Udi's
Afternoon tea is such a decadent and indulgent treat. It's a time for sumptuous sandwiches, delicious desserts and a hearty brew. By nature, sandwiches and sponge cake are chock full of gluten. Finding a coeliac-friendly tea is pretty hard to come by, so instead, I've partnered with Udi's to showcase some of their amazing products and develop recipes suitable for any gluten free afternoon tea.
I'll be sharing recipes for gluten free vanilla cake with salted caramel frosting and two gluten free sandwich recipes: grilled paneer and sun-dried tomato and smoked salmon and cucumber. I served the three of these with fresh strawberry lemonade, English breakfast tea and Udi's gluten free lemon wafers.
I love Mexican food and Cinco de Mayo is the perfect opportunity for relishing in a bit of gauc and a cheeky shot or two of tequila!
