I've always been an oatmeal lover, but ever since having to embrace a gluten free lifestyle, I've had to be all ixnay on the oatmeal. Bummer. So last Saturday morning, the day after I made these quinoa and chickpea veggie burgers, I sauntered into the kitchen, in need of breakfast. The boys were still in bed, so it was just me and a pantry full of possibilities. I saw the punnet of fresh, ripe strawberries and then I saw the leftover quinoa. By now you should know what happened next.
There's nothing radical about this recipe, if you like quinoa, then you'll love it. If you're on the fence about quiona, then I'd suggest you try a different approach ... one with less quinoa. Haha. But, all you need to create this yummy dish is fresh fruit, preferably strawberries, but you could use anything: mandarin oranges, apple, pear ... You'll want a bit of milk and, if you're partial to slightly sweet breakfasts, a bit of sugar wouldn't go amiss. You'll love how fresh this recipe is! And please don't be afraid to substitute the cow's milk for almond milk or soy milk, if that's more your thing.

1 teaspoon cinnamon
1 tablespoon brown sugar
1 cup quinoa, pre-cooked
2 teaspoon honey
2 cups strawberries, chopped
