I've given you quantities to make just one serving, but this recipe can be easily doubled or tripled to accompany more snackers. I adapted this recipe from The Medicinal Chef and have added the use of tikka curry spice mix and poppyseeds. The flavor reminds me of Bombay Mix or chiwda, a popular Indian snack.
As far as snacking goes, this is a very basic, but flavorful recipe. It's perfect for pouring into a bag and taking out with you or curling up in front of the television. The possibilities for customization are endless: you could use pecans, hazelnuts or peanuts if you didn't prefer cashews. Swap the poppyseeds for sesame or nigella seeds and play around with different spice combinations or curry spice mixes.

For the curried cashews1 tsp tikka curry spice mix

- If you are a vegan who does not eat honey, substitute with equal amounts of agave nectar

Instructions:
Gluten Free Curried Cashews with Poppyseed- Preheat your oven to 170 C/325 F.
- Put raw, salted cashews into a medium-sized bowl and drizzle with honey.
- Sprinkle over the tikka curry spice mix and the poppyseeds. Toss to thoroughly coat.
- Pour the cashews onto a baking tray lined with baking paper or a silicone baking sheet and spread them out.
- Bake for 8 to 10 minutes or until cashews begin to darken but do not let them burn.
