Easy St Patrick's Day Cupcakes for Two
Couples and small families tend to get left out of the baked goods loop. Junk food seems to come in dozens or half dozens, so one or two things usually happens in my house:- We each eat two of everything so that nothing's wasted, which means more sugar, which isn't exactly healthy or
- We eat our fill and then leave the rest in the snack basket with the intention of finishing it off later, but never actually getting around to it until it's time to toss it in the bin.

I saw a popular Pinterest recipe for just two cupcakes and that was my starting point. But the cupcakes that recipe produced weren't very nice. They were a bit ... rubbery and too salty and too eggy. Plus, the recipe only yielded two cupcakes and there are three of us in my family! So it was back to the drawing board and on my second attempt, I came up with these babies!
They're pretty much the perfect cupcake. There's not loads of them so there wasn't any waste. They're fun and perfect for a small St Patrick's Day celebration. They're not salty or eggy, thanks to a discovery I made involving eggs. You know that stringy bit inside the white? It's called the chalaza (kuh-LAY-za) and it's the pesky little culprit known for making baked goods taste eggy. It reacts to salt in baked goods and emphasizes the eggy taste (if you're sensitive to the eggy taste in baked goods, that is). I am. It's one of the reasons I'm not a big fan of cakes. Most cakes taste like eggs to me and it's a bit revolting. I promise, if you follow this recipe, your cupcakes will not taste eggy!

Ingredients:
For the St Patrick's Day Cupcakes for Two
1/4 cup gluten free plain/all-purpose flour
1/4 tsp baking powder, heaped
1/2 tsp vanilla bean paste
1 tsp vanilla
1 egg white, chalaza sifted out
2 tbsp sugar
2 tbsp butter, melted
2 tbsp milk
green paste color
chocolate frosting
Instructions:
Easy St Patrick's Day Cupcakes for Two- Preheat the oven to 180C/350F
- Whisk the egg white and sugar until combined
- Add all of the vanilla and butter and stir well
- Add flour and baking powder and stir until smooth
- Pour in milk and food coloring and stir
- Divide the batter into four cupcake cases
- Bake 12 to 15 minutes or until set
- Cool completely and frost with chocolate frosting and decorate with St Patrick's shamrock sprinkles

Very nice. I hate throwing stuff out, but I don't want to eat it all either. Great idea! I had no idea about the stringy part of the egg. I usually take it out, but only because for some reason it grosses me out. Now I have a logical reason. I love that! Kathleen @ Fearlessly Creative Mammas
