Gluten-Free Vegan Stir Fried Peas & Peppers
January is a month-long celebration of the vegan diet. Veganuary seeks to raise awareness of the vegan diet and what it means to not eat any animals or animal products. I don't often eat vegan food, but it's nice to shake things up every now and then. I love these sweet peas and peppers and the smoked paprika adds an extra depth and gives this dish a Spanish feel.This stir-fried pea dish makes a great vegan lunch option or you could increase the portions and serve it as a side dish or even a main course. If vegan food isn't your forte, try topping it with a runny fried egg or folding through some sliced chorizo or bacon, too with feta crumbled over top.
Ingredients:
For the stir fry1/2 red onion, sliced
1/2 jar roasted red peppers, drained and sliced
1 tablespoon dried coriander
2 teaspoons olive oil
2 teaspoons smoked paprika
50ml water
300 grams frozen petits pois
salt
black pepper

Vegan Stir-Fried Peas and Peppers
This light stir fry also doubles as a delicious warm salad and it would be perfect all through the year, too.
Instructions:
- Fry the onions in the olive oil until fragrant and beginning to colour, about 3 minutes.
- Add the paprika and the frozen peas and continue to fry.
- Toss in the red peppers and heat through.
- Add the coriander, season with salt and pepper and serve.
