Gluten-Free Vanilla Fortune Cookies

I love a good fortune cookie, and I'm a total fortune cookie purist: none of those crazy flavours for me, and I want my fortune to be an actual fortune, not just halfhearted advice. Although I've always loved these Chinese takeaway delicacies, I never thought to try making them, so I was both excited and a bit apprehensive when I saw this year's Great British Bake Off contestants try their hand at these bent biscuits.

These gluten-free fortune cookies aren't 100% like normal fortune cookies and that has a lot to do with the flour. As written, this recipe yields a dozen fortune cookies with the texture of shortbread and they're absolutely delicious! Plus, they're so quick and easy to whip up, you'll want to make them every time you opt for a Chinese takeaway!

Ingredients:

For the fortune cookies
1/2 teaspoons vanilla extract
1 large egg white (about 35 grams)
55 grams sugar
55 grams gluten free all-purpose flour
60 grams dairy free butter

Great British Bake Off technical challenge gluten free fortune cookies

The Great British Bake Off is back (and in a new home)! If you tune in every week, like me, you're probably often saddened to find that there's never any mention of gluten-free baking. (Seriously, what do we have to do to get a bit of recognition?!) Inspired by all of the fantastic bakes the contestants make and in the spirit of the #GBBOBakeAlong, I decided to start #GBBOGlutenFree last year and make gluten-free versions of all of the technical bakes from the show!

Instructions:

  1. Preheat the oven to 200c/400f. Line a baking tray with a silicone baking mat or greaseproof paper.
  2. In a bowl, combine the egg  white, sugar, butter and vanilla and beat with an electric or handheld whisk until it is slightly runny and a pale yellow colour.
  3. Fold in the flour and then scoop one tablespoon of the mix and spread in a small circle on the baking tray.
  4. Tuck a fortune inside of the cookies before the first fold, then use the rim of a glass to fold the semi-circle into half again.
  5. Allow the fortune cookies to rest in a pan before moving them to a wire rack to cool completely.
