Vodka mojitos are a perfect way to update a classic mojito and ideal for anyone who isn't a fan of rum. As with most cocktails, this one is super versatile--throw any flavours at it that you'd like. Try skipping the oranges and adding a medley of berries, or get rid of the fruits altogether and go with fresh cucumber or even decadent chocolate syrup. But if you want an easy, sweet and citrusy take, then you can't go far wrong with this recipe with fresh orange and lovely smooth honey!
1 lime, juice of
1 orange, peeled, seeded and segmented
2 tablespoons honey
240ml vodka
500ml orange squash, diluted
fresh mint

A few weeks ago, a friend came over, bearing the gift of a flowering mint plant. The plan had been to spend the afternoon chatting and sipping mojitos and eating gluten free crackers slathered with the most decadent French cheese. Without any white rum in the house, we ended up making vodka spiked lemonade instead--not a difficult compromise, let me tell you! Still, I was left with this gorgeous mini mint bush that just keeps growing and growing and growing. So, every now and then, I prune it back and throw all the leaves into a recipe. Still with no white rum (I really need to add it to the shopping list!) these vodka mojitos were born.

How to Make a Vodka Mojito

Instructions:
- Put the lime juice, honey and orange segments in a cocktail shaker and muddle
- Add the mint leaves and muddle again until fragrant
- Add the vodka and stir
- Divide into two glasses with glass and pour over the orange squash
- Garnish with mint leaves and an orange segment
