Gluten-Free One-Pot Taco Pasta
When I was pregnant, a lot of my food cravings were for textures more than actual foods. I may not have known exactly what I wanted to eat, but I always knew what I wanted the food to feel like and one of my big texture cravings was for something creamy and savoury. This pasta dish ticks that box. There's no heavy traditional pasta sauce here, instead, you use a nice guacamole as your sauce and thin it out with a bit of sour cream. I'm telling you now, you. will. swoon.Seriously, the only thing better than cheesy, creamy comfort food is not having to spend hours in the kitchen preparing it. This whole meal is ready in less than 20 minutes--that's quicker than an episode of Paw Patrol, so by the time you've finished bribing your child with the show, dinner is on the table and cool enough for them to eat. Plus there's only one pot, so doing the washing up won't take ages. This is what we in the Mommahood call a win; win and this dish is definitely a weeknight winner!
Ingredients:
For the taco pasta2 tablespoons sour cream
2 tablespoons coriander leaf, halved
50 grams gluten free taco seasoning
120 ml water
125 grams cherry tomatoes, quartered
150 grams frozen sweet corn
240 grams guacamole
250 grams shredded cheese
250 grams gluten-free fusili pasta
500 grams lean beef mince
sea salt and black pepper
spring onions

How to Make the Creamiest Gluten-Free One-Pot Taco Pasta
I used a shop-bought guacamole because who has time to whip up from-scratch guacamole?! Use whichever brand and type you prefer, but for this meal, I like to use a guacamole that's a bit smoother because it makes a perfect sauce to coat the pasta evenly. Also, don't be afraid to try out other gluten free pasta shapes. I like the fusili because the spirals are great for holding onto the sauce and bits of the mince and vegetables, but again, use your family's favourite to make it extra special.
Instructions:
- Boil water for pasta and cook according to the packet instructions, most gluten free pasta takes about 9 minutes. Strain the pasta into a colander and set aside.
- Season the mince with salt and pepper and brown it in the same pan with a bit of oil. When mostly browned, sprinkling over the taco seasoning, pour in the water and cook through.
- Add the chopped tomatoes, frozen corn and strained pasta along with one tablespoon of the coriander. Stir in the cheese, guacamole and sour cream and mix until the pasta is well coated.
- Sprinkle over the remaining coriander and scatter over the sliced spring onions and serve.
