Gluten-Free Dairy-Free Coconut Milk Overnight Oats

Breakfast is my absolute favourite meal of the day and I am an oatmeal fiend. So much so that it's bordering on obsession, and when I saw the challenge to develop a recipe using Vita Coco's new coconut milk, I immediately thought of creamy oatmeal.

Leave that from-the-packet stuff with lumps of dehydrated fruit in the back of your cupboard. I'm going to show you how to make your own fruit-filled, creamy oatmeal that is gluten-free, dairy-free, suitable for vegetarians and vegan-friendly. I've used raspberries and peaches because they're seasonal, go incredibly well with coconut and it was too tempting not to, but you can use any fruit you have on hand or whatever is seasonal.

Ingredients:

For the overnight oats
2 teaspoons vanilla extract
40g gluten free rolled oats
60ml Vita Coco Coconut Milk
100ml water

For the topping
1/4 cup raspberries
1 peach
1 tablespoon desiccated coconut
drizzle honey or agave nectar

Coconut Milk Oatmeal that #TastesLikeNoUdder from Anyonita Nibbles

 Let me just tell you about this coconut milk. It truly #TastesLikeNoUdder. Some coconut things can taste like a bottle of suncream, which can be completely off putting, and traditional tinned coconut milk is usually a solidified lump. But this Vita Coco Coconut Milk is truly fantastic. It's stored in the fridge and comes in a large plastic bottle that is easy to open and it truly tastes great. I can't wait to use it in a savoury recipe!

This breakfast is full of coconut, y'all. The oats are soaked over night in the most gorgeous, luscious coconut milk making them dead creamy. They're topped with fresh fruit and a scattering of desiccated coconut and finished with just a drizzle of honey. I'm telling you, this is one decadent but easy breakfast. I warmed my oats up the next morning before adding my toppings and they were absolutely delicious.

  1. Combine the oats, water, vanilla and Vita Coco Coconut Milk in a bowl.
  2. Cover and refrigerate overnight.
  3. Remove from the fridge the next morning and warm in the microwave for about 1 minute.
  4. Top with fresh raspberries, peach slices, a scattering of desiccated coconut and finish off with a drizzle of honey or agave nectar.

  2. I love overnight oats. I normally make them with hazelnut or almond milk, but I'll have to give coconut milk a go sometime.

      You know, I've never tried hazelnut milk! It's definitely on my list! Would you say it's a bit sweeter than almond milk? Or does it differ at all?
