Staying true to my southern American roots, I served this barbecue chicken with the most incredible mashed potatoes and creamed corn.
If your mouth isn't watering now, just wait until you sink your gnashers into this super juicy chicken. It's finished off with a drizzle of lip-smacking fresh lime and is the perfect sticky fingers, not-suitable-for-a-first-date barbecue chicken thighs! In fact, it's the only barbecue chicken thighs recipe you'll need. Promise. Oh, and it's easy as pie!
1/2 bottle gluten free barbecue sauce
1 tablespoon garlic granules/powder
1 tablespoon coconut oil
1 lime
750 grams boneless chicken thighs

If (and that's a very big if) there are any leftovers, they would make an excellent lunch the next day. This recipe would also be great for a picnic, too! I used boneless chicken thighs because they're naturally succulent and juicy and much tastier than chicken breasts, but this recipe would be great with any cut of chicken. Swirl a pack of drumsticks in that sauce or smother a tray of chicken wings.

Y'all, it's hotting up outside! Okay, not in this exact moment, but in general, we're careening towards warmer days! As soon as it gets warm enough to hang the washing on the line, I immediately start thinking of barbecues--nothing beats the taste of food cooked over an open flame. But living in Manchester, those days of optimum barbecue weather are few and far between. How to Barbecue Chicken in the Oven

Instructions:
- Pre-heat the oven to 200c/400f.
- Line a baking tray with foil and brush with coconut oil.
- Season the chicken thighs with the salt, pepper and garlic granules.
- Bake in the oven for 15 minutes.
- Remove from the oven and brush some sauce on both sides of the chicken thighs.
- Return to the oven and bake for a further 5 minutes.
- Brush more sauce on the chicken thighs.
- Return to the oven and bake for a further 5 minutes.
- Remove from the oven and increase the temperature to 220c/425f.
- Brush more sauce on the chicken thighs.
- Return to the oven and bake for a further 5 minutes.
- Remove and let rest 10 minutes before squeezing over the lime juice and serving with your favourite sides.
