Gluten-Free Chicken Caesar Salad Pizza
I find it incredibly difficult to resist a chicken Caesar salad. If it's on the menu at a restaurant, I'm likely to order it (usually with a side of French fries---moderation & all that). Three years ago, I first shared my recipe for chicken Caesar salad pizza with basil pizza crust, unfortunately, it that recipe isn't gluten free, but this one is!
I like buying those bags of Caesar salad with the croutons, cheese and dressing already included. It makes this recipe even faster! (Because the croutons come in their own sealed little bag, there's no chance of cross contamination if you don't open the pack, making this recipe perfectly gluten free!) But if you can't find that or have some romaine lettuce to use up, feel free to use what you have.
Ingredients:
For the pizza1 gluten-free pizza base
1 bag pre-washed Caesar salad kit or romaine lettuce
1 bottle Caesar dressing
1 roasted chicken breast
handful Parmesan cheese shavings (if not included or not using salad kit)
few shakes grated Parmesan cheese
black pepper

How to make a gluten-free chicken Caesar salad pizza
Here's a reason to jump for joy: this pizza is effortless. Seriously, all you have to do is assemble it and heat various ingredients. The most taxing part is opening the packets. Sometimes, after a long day, you need a low-maintenance meal. That's exactly what this is. Think of this recipe as that easy-going friend of yours, you know, the one who never causes any drama and is so refreshing and fun to be around.
Instructions:
- Preheat your oven to 200c/400f.
- Squirt the Caesar salad dressing from the kit (or use a few squirts from the bottle) onto the base of the pizza. Grab a spoon and make sure it evenly coats the base.
- Slice that pre-cooked chicken breast and arrange it onto the pizza base.
- Sprinkle over the Parmesan shavings.
- Bake for 10 minutes or until the crust is nice and golden.
- Remove from the oven and top with the romaine lettuce and a final drizzle of Caesar dressing.
- Grind over some fresh black pepper and sprinkle on the grated Parmesan before serving.
