Gluten-Free Eggy Bread
Growing up in the American South, elaborate cooked breakfasts were how you started the weekend and one of my all-time favourites is my mom's French toast. French toast, or eggy bread, as it's called in the UK, is a deliciously simple dish of bread dipped in eggs and pan fried, served with maple syrup and fresh fruit. It works best with slightly stale bread, and given that most gluten free bread naturally has many of the properties of slightly stale normal bread, it works great! This is one of those easy to make yet impressive breakfasts that you could pull out of your back pocket when you have guests or even for Christmas morning.Ingredients:
For the French toast eggy bread1/2 tablespoon ground cinnamon
1/2 cup milk
1 teaspoon vanilla extract
1 tablespoon brown sugar
2 eggs
4 slices of gluten free bread
salt
butter
golden or maple syrup
icing or confectioner's sugar
fresh raspberries

How to Make Gluten-Free French Toast
French toast or eggy bread is incredibly versatile! If you're dairy free, swap the cow's milk for an alternative you prefer. Cashew or almond milk would give this an interesting nutty taste. If you're not too keen on raspberries or if they're not in season, opt for your favourite fruit that is or thoroughly defrost some frozen berries for use. Just be sure to pat them dry so your breakfast isn't too soggy!
There's a secret to getting gluten free bread to work properly with French toast. It took me a bit of trial and error to get it right, but here's the catch: make sure you lightly toast the bread BEFORE you dip it into the eggy mix. Otherwise, the sponge-like gluten free bread will absorb too much of the eggy mix, making it impossible to flip over without it falling to bits. Just follow the instructions below and you'll have perfect, you-won't-believe-it's-gluten-free eggy bread ready to serve in minutes.
Instructions:
- Toast each piece of bread lightly under a grill or in a toaster. Toast for no more than 30 seconds each side.
- Add the eggs, milk, brown sugar,salt, vanilla and cinnamon to a bowl or dish large enough for the bread to fit in and whisk to combine.
- Dip both sides of the bread in the egg mixture.
- Melt butter in a pan.
- Fry each slice of bread for 1 minute per side or until eggs are cooked.
- Squeeze over lashings of syrup and sprinkle with icing sugar.
- Finish with fresh fruit and serve.
