Gluten Free Blackberry Vanilla Chia Pudding
Breakfast foods are my favourite, but even though I'm a morning person, I don't always feel like getting up and preparing something first thing in the morning. So after I discovered chia seeds, a friend of mine shared with me this revolutionary breakfast of chia pudding. The best thing about it? You just make it up the night before, leave it in the fridge and you can grab it on your way to work. Easy.Ingredients:

Overnight Chia Pudding with Fruit and Nuts
The greatest thing about chia pudding, besides the fact that it basically "cooks" itself, is how versatile it is. Do a quick search on Pinterest and you will find hundreds of amazing chia recipes using all types of fruits, nuts, even chocolate.A note on the texture, this has the texture of bubble tea or tapioca pudding. It's quite a jellied texture that didn't sit too well with me. But if you're not bothered by that texture, then you'll really enjoy this! Chia seeds are little superfoods in the own right and the health benefits you'll get from them may be enough for you to ignore the slightly odd texture.
Instructions:
- Mix blackberries, chia seeds, vanilla extract, Greek yogurt, milk and honey in an airtight container.
- Leave in the fridge overnight.
- Serve the next morning topped with more blackberries and a handful of chopped walnuts.
