My peanut butter and Nutella microwave cookie has been given a gluten-free makeover!

Gluten Free Nutella and Peanut Butter Microwave Cookie
A few years ago, before my Coeliac Disease diagnosis, I made this mug cookie with traditional flour. I wanted to re-share it with two slight adjustments that will make it suitable for people who need to or choose to avoid gluten. The changes are simple, I removed the vanilla (because I liked it better without, but you can keep it in-it's always gluten-free)and I swapped an equal portion of flour with ground almonds. Easy!Ingredients:
For the Gluten Free Nutella and Peanut Butter Microwave Cookie1 tbsp butter
1 tbsp smooth peanut butter
1 tbsp (heaped) Nutella
1 egg yolk
2 tbsp brown sugar, packed
3 tbsp ground almonds
Gluten Free Nutella and Peanut Butter Microwave Cookie
Instructions:
- Put peanut butter, Nutella and butter in a mug.
- Microwave for about 20 seconds, to soften.
- Add the sugar and stir well.
- Stir in the egg yolk until fully incorporated, then add the ground almonds.
- Microwave on full power for about 3 minutes, checking for doneness every 30 seconds or so.
