1 pack gluten free sausages, skins removed
1 onion, diced
1 tablespoon garlic granules
1 litre semi-skimmed milk
2 handfuls of fresh spinach
2 teaspoons ground almonds
salt
pepper
50 grams butter
50 grams vintage cheddar cheese
250 grams potatoes, chopped

This soup is a deliciously, easy option for a quick late autumn/early winter dinner. Ingredients:
For the Gluten Free Sausage & Spinach Soup1 pack gluten free sausages, skins removed
1 onion, diced
1 tablespoon garlic granules
1 litre semi-skimmed milk
2 handfuls of fresh spinach
2 teaspoons ground almonds
salt
pepper
50 grams butter
50 grams vintage cheddar cheese
250 grams potatoes, chopped

Instructions:
- Melt the butter in a large soup pot, over a medium heat.
- Fry the sausage meat in the butter until beginning to pink.
- Add the chopped onion and garlic granules and fry until the onions are translucent and fragrant. Sprinkle with a pinch of salt,
- Add in the potatoes and a bit more salt and some pepper. Cook for a few minutes and add the ground almonds to help thicken the sauce and add a lovely, nutty flavour.
- Add the milk into the pot along with a 2/3 of the cheese. Bring to a boil and then simmer for about 15 minutes until the potatoes are tender and cooked through. Stir in the spinach and let simmer for 5 minutes.
- Finish the soup with a good pinch of seasoning and the rest of the cheese before serving.
This soup sounds absolutely wonderful! I love the combination of ingredients and how simple this is to make :)
