This lovely and quick gluten-free tapas dish from Jo's newest cook In the Mood for Healthy Food, a real page-turner of beautifully photographed food and a collection of recipes that skimp on calories but not on flavour.
If this was a dish I had had on hols, I know it's one that I would be eager to recreate at home! That's the beauty of Jo's recipes, they look and sound so appetising that you can't resist having a go. Plus, they're an absolute cinch to prepare!
The trickiest bit was not overcooking the broad beans! I don't cook with broad beans very often and I could only find a pack of frozen ones at my local supermarket, which don't need as long to cook. The first batch overcooked quickly, but the second batch turned out okay! I'd suggest under cooking them slightly as you'll add them back into the pan at a later date.
The best bit of this recipe was the simple ingredients! Scoop up the beans with tortilla chips, spread on chunks of baguette or serve with soft tortillas for a tasty, authentic tapas experience! Add in a bit of Spanish music, the roar of the Mediterranean and sip a rum cocktail and you just might forget you're not on holiday on a balmy Spanish beach.
