Gluten Free Stone Fruit & Custard Ice Pops

Full of fresh stone fruit, these gluten free, no added sugar custard based ice pops are creamy and delicious!

Gluten Free Stone Fruit & Custard Ice Pops

You take sweet and juicy peaches and plums, remove the skins and slice them. Then you mix them with delicious custard, pour them into an ice pop maker, freeze and then enjoy! They're easy peasy! If you have a Zoku, they're really easy and are ready in less than 10 minutes.

The peach crop here in the UK has been unbelievable this year. We've consistently had some of the juiciest, sweetest peaches for years. Every time we go to the supermarket, we come back with a punnet of peaches because I just can't resist them! So finding new ways to cook with them has been lots of fun.

See that nifty little Zoku machine in the background? It's amazing! It allows you to make ice pops in around 10 minutes. (It may take longer depending on the thickness of your base and the sugar content.) I love my Zoku; it's absolutely fantastic. You have to store the machine in the freezer for 24 hours before it's ready to make ice pops, but after you've done that, you could keep it in the freezer and use it repeatedly. Because the ice pops come out clean, there's no need to wash after every use, unless you spill something.

Ingredients:

For the ice pops
1 cup vanilla custard
2 large peaches
3 medium plums

Instructions:

  1. Peel your peaches and plums. This is really easy to do, here's a simple tutorial.
  2. Slice the fruit into wedges and then dice finely.
  3. Pour the ready-made custard over the top and stir to combine.
  4. Pour the fruity custard into the ice pop maker, according to the manufacturer's instructions. 
  5. Freeze and then enjoy!

  7. These sound so refreshing right about now. I've also been craving peaches like crazy and had my very first one of the season last night. I ate it over the kitchen sink while the juice ran every which way. It would be so much better to capture all that goodness in a popsicle. Love it.
