Bake the crispiest, juiciest oven fried chicken with OXO's new flavour shake granules!

Living in the UK, you become quite adept at having a stream of rainy day back plans to hand, especially when it comes to barbecues and picnics! We were planning two barbecues, to take advantage of a short stint of glorious weather; the first barbecue went off without a hitch. The second, not so much. With gray clouds threatening to burst at any moment, we needed a back up plan and quick.
I received a box of OXO's new Shake& Flavour Seasoning Granules for the purpose of whipping up a quick spread and it was my intention to use some of the seasoning in the box for a barbecue. Not wanting to abandon the granules and still excited to try them, I brainstormed an easy way to use the granules and the handy recipe sheets included in the package! (Nice one, OXO!)
I used the OXO Southern Fried Shake & Flavour Seasoning Granules for my oven fried chicken and I heard from my boys that it was absolutely delicious. I could see that the chicken was very juicy and crispy as if it had been deep fried. Unfortunately, none of OXO's Shake & Flavour Seasoning Granules are gluten free, so I wasn't able to try them, but the chicken I made with them was gobbled up, with Callum (my 2 year old) repeatedly saying, "More chicken, please" throughout the meal!
If the weather had held up, I was going to make burgers on the barbecue with the Rich Beef Seasoning Granules and I was going to thread diced chicken breasts on skewers after marinating it in the Tikka Seasoning Granules and toss that onto the barbecue, too. But those dishes will have to wait until the weather is consistently better.
The good thing about the OXO Shake & Flavour pots is how convenient they are! They're handy, versatile and easy to use: you can sprinkle on the seasoning before cooking as a marinade, during cooking to enhance flavor or after cooking to temper and bolster the flavor. This versatility means you don't have to plan days in advance for your barbecues and fill your fridge with marinating meat. A quick dash with these pots and you've got a flavor-packed dish.
I also made some griddled corn with coriander/cilantro, sweet potato hasselbacks and coleslaw. I made a gluten free alternative to the oven fried chicken, which I'll share at a later date, since that's made without the OXO ingredients. This chicken is amazing! You won't even realize it's not been properly deep fried--you get all of the crunchiness and juiciness of proper deep fried chicken without the excess grease and general unhealthiness. For the OXO Oven Fried Chicken
OXO Shake & Flavour Southern Fried Seasoning Granules

For the Coriander Griddled Corn
2 large ears of corn
butter
olive oil
coriander leaf
garlic salt
For the Hasselback Sweet Potatoes with Brown Sugar Crust

Instructions:
OXO Shake & Flavour Oven Fried Chicken- Preheat the oven to 200c/400f.
- Sprinkle the chicken with some of the OXO Shake & Flavour seasoning. Cover and let marinate an hour.
- Combine about a cup or so of flour in a medium sized bowl with a further 2 tablespoons of the OXO seasoning granules.
- Toss the chicken into the flour and seasoning until well-coated.
- Heat a tablespoon or two of oil in a frying pan and brown the chicken on all sides for about 2 minutes until golden.
- Arrange the chicken on a baking tray and bake in a preheated oven for 30 minutes or until the chicken is done and the juices run clear when pierced.
- Steam the corn for about 10 minutes or until tender.
- Heat a griddle pan until very hot. Brush the corn with butter and roll in a mix of coriander leaf and garlic salt.
- Griddle the corn until char marks appear and the corn is hot, drizzle the corn with olive oil while griddling if necessary.
- Remove the corn from the griddle pan, cut into smaller pieces and serve hot.
- Preheat the oven to 200c/400f.
- Cut thin slices 3/4 of the way into each sweet potato.
- Rub with oil and sprinkle over brown sugar.
- Bake the potatoes 60 to 90 minutes or until tender.
*Note* Hasselback sweet potatoes don't tend to fan apart like traditional Hasselback potatoes. This is because the sweet potatoes are a different, mushier texture.
