I am super-busy these days (like many of you, I'm sure!), with a full-time job, two active teenage boys, a husband, two cats, and a blog. As you can imagine, that does not leave me with a lot of time to actually cook! So, I am always on the lookout for quick and easy meals to make for my family. Quick and easy are not the only requirements, though, because I also want the dishes to be healthy and kid-friendly, and contain ingredients that fit into my budget.
Pork chops are a simple option for a busy weeknight meal, and always a hit with the kids. I like to look for new ways to prepare them so we don't get tired of having the same old thing too often. For this recipe, I made use of a packet of blue cheese dressing mix that had been sitting in my pantry for months. I was inspired to mix it with some Panko bread crumbs, along with some pepper, and use that for my pork chop breading. Then I baked the chops in the oven, and in less than 30 minutes had an awesome dinner on the table!
We loved the tangy taste of the blue cheese dressing mix combined with the mellow pork chop flavor and complementary zing of the pepper. I served the chops with a side of fresh spinach tossed with apple pieces and dried cranberries and a quick dressing made from olive oil, balsamic vinegar, and lemon juice. Today she's sharing a delicious, 30 minute recipe for oven baked pork chops encrusted with blue cheese and Panko breadcrumbs. Ingredients:
For the pork chops
1 egg, beaten1 cup Panko breadcrumbs
1 1.25 ounce packet blue cheese dip and dressing mix
2 tsp black pepper
2 tbsp milk
2 tbsp parsley flakes(optional)
4 bone-in pork chops, trimmed
Instructions:
Blue Cheese Encrusted Pork Chops
- Preheat the oven to 220c/450f.
- Mix together the egg and milk in one bowl.
- Combine the blue cheese mix, pepper, breadcrumbs and parsley flakes in a separate bowl.
- Dip each pork chop in the egg mixture, then coat with the breadcrumb mixture and place in a baking pan.
- Bake for 10 minutes, then turn the pork chops over and bake for a further 10 minutes, until the pork chops are done and the juices run clear.
