Gluten Free 10 Minute Tom Yum Fish Ball Noodle Soup

Slightly spicy Tom Yum flavored fish balls swirl in a hot and sour broth with udon noodles and fresh coriander in this 10-minute dish!

10 Minute Tom Yum Fish Ball Noodle Soup

I've always been a sucker for Asian food and this Tom Yum Fish Ball Noodle Soup ticks all my boxes of good Asian food: it's quick, it's healthy, it's sweet, it's sour, it has noodles. And if you're not already in love with the idea of this soup, let me tell you this: it's ready in 10 minutes!

Ten minutes and it's actually good for you? Oh, yes. We stumbled upon these fish balls by accident. We were in our local Chinese supermarket on the weekend of Chinese New Year, so the staff were out in force. They were flogging this authentic ceramic rice bowl made by Chinese orphans along the banks of the Yellow River and that authentic Chinese wok that will make all your stir fry dishes taste like they were made by in Asia. And then there was this guy, handing out fish balls, halved and speared onto cocktail sticks. We tried these Tom Yum flavored fish balls and then some salmon fish balls and within seconds, I found myself reaching into the chest freezer and plucking up a bag each to toss into the shopping trolley.


Here's one of my biggest grocery shopping weaknesses: I'm such an impulse buyer. I go through picking up things that look interesting or that taste amazing and shove them into my freezer when I get home, with no clue how to use them. Luckily, on the back of the packet, the fish balls state that they're ready in under 5 minutes if you toss them into soup. Win!

A bowl of Tom Yum Fish Ball Noodle Soup

This soup is so delicious, y'all. You could easily serve it for a starter or you could bulk it up with even more veggies and maybe two packs of fish balls and serve it as a main with some gyoza on the side. Delicious.

Ingredients:

For the Tom Yum Fish Ball Noodle Soup
1 tbsp gluten free soy sauce
1 lime, juiced
2 tsp brown sugar, packed
2 star anise
5 cups chicken or fish stock
100g fresh green beans
200g gluten free Tom Yum flavored fish balls
200g gluten free udon noodles
fresh coriander, to taste
fresh ginger, grated, to taste

Instructions:

10 Minute Tom Yum Fish Ball Noodle Soup
  1. Pour the stock, grated ginger, star anise and sugar in a large saucepan. Bring to the boil and simmer until slightly reduced, about 5 minutes.
  2. Place the noodles in a glass bowl while the stock simmers. Cove with boiling water and let stand 3 to 5 minutes. Drain.
  3. Strain the stock into a separate bowl. Pour strained stock back into pan and add fish balls. Simmer 5 more minutes until cooked through. Add green beans after the fish balls have been in 3 minutes.
  4. Top with fresh coriander and serve by scooping noodles into bowls and pouring over the soup.
