One of my favorite things about summer is zucchini. I grew up with my mom using it to make delicious bread and now I'm going to share an addicting recipe from my grandma--Chocolate Zucchini Cake.
Ingredients:
For the cake1/2 tsp cinnamon
1/2 cup butter
1/2 cup sour milk (milk plus 1/2 tsp baking soda)
1/2 cup applesauce
1 tsp baking powder
1 tsp vanilla extract
1 tsp baking soda
1 tsp salt
1 cup zucchini, grated
1 3/4 cup sugar
2 eggs
2 1/2 cups flour
4 tbsp cocoa
For the topping
1/2 cup nuts (optional)
1/2 cup brown sugar
3/4 to 1 cup chocolate chips
Instructions:
Preheat oven to 350 degreesMake the sour milk by combining 1/2 tsp baking soda with milk
Put butter, sugar, zucchini, sour milk, applesauce, eggs and vanilla in mixer
Combine flour, salt, baking powder, baking soda, cinnamon and cinnamon in a separate bowl
Slowly add the dry ingredients in with the zucchini mixture
Pour in 9x13 pan and top with chocolate chips, nuts and brown sugar
Then come the goodies. The original recipe actually only calls for 1/2 cup of chocolate chips, but I like to put more. The chips will sink to the middle of the cake and make it more moist.
Add brown sugar on top. You can also add nuts if you want but I'm not a big fan of nuts in cake.
Bake for 40 to 45 minutes. Let sit at least 5 minutes before slicing.
